How to Make Sourdough Tortillas

If you are just getting started with sourdough, tortillas are a great way to go! Much less fussy than an artisan loaf of bread or other technical sourdough recipes. Sourdough tortillas are soft, moist and chewy. Take tortillas off your shopping list and make this part of your weekly routine.

Sourdough Weekly Routine

Keeping a sourdough starter can seem intimidating at first. I sure was! But let me assure you, once you make it part of your weekly routine, it’s not that big of a deal. I really only work with my sourdough starter a couple times a week. Maybe more if I am feeling adventurous.

I chose one day out of the week to be my sourdough day. The night before I want to bake with my sourdough, I pull my starter out of the fridge and feed it. After the sourdough starter has been fed an equal parts water and flour, I leave it out on the counter.

Sourdough Bread and Tortillas

Decide what it is you need to prepare for the week. For our family its 2 loaves of sandwich bread and tortillas. These are staples in our house. These are the two things I prepare on my sourdough baking day.

As a sourdough beginner I would suggest choosing a couple recipes that you can do well. Practice them and practice them! Build a foundation of fool proof recipes. As you gain more experience, branch out and experiment.

When learning a new skill, its best to learn from someone who knows. Here is the sandwich bread recipe I have used over and over. It is moist and holds a sandwich together beautifully. Honey Wheat Sourdough Sandwich Bread.

When my baking day is over, I either feed the starter and put it back into the fridge or feed it and keep it out to try another recipe. For example, maybe I want to make sourdough scones for the weekend, I will leave it out to make that.

Sourdough Tortillas are the Easiest!

Sourdough Tortillas really are simple to put together.

You will need:

  • Scale
  • All Purpose Flour
  • Water
  • Sourdough Starter
  • Butter
  • Salt

The Process:

You can prepare the dough in the morning or at least 4 hours before you are ready to cook the tortillas. The dough needs at least 4 hours for proper fermentation. And don’t worry about letting them sit out too long, the dough jut ferments longer. And that’s just fine! Remember with sourdough, the longer it sits the more sourdough taste it will have.

After the ingredients are mixed together, let the shaggy dough rest for 30 minutes. During this time the flours soak up water. This process is called autolyse.

Then give the dough some folds. When working with sourdough, instead of kneading the dough, you fold. Picking up one side of the dough and folding it over the bulk of the dough. Just keep folding it over itself. The gluten will start to activate, and the dough will hold together.

Place the dough on the counter or at room temperature until you are really to cook the sourdough tortillas. This could be from 4 to 12 hours.

Throughout the day I will give the dough a couple folds as I walk by. When it’s time to cook. I fold the dough a few more times.

Prepare a floured surface. Divide the dough into balls. Bigger for a larger tortilla or smaller for smaller taco size.

Roll the dough balls out to a windowpane consistency. Nice and thin but without holes.

Turn on your griddle or pan to high. You want it piping hot!

When ready to cook. Lightly oil the griddle or pan. Cook the thin tortillas. Watch for bubbles forming. The tortilla will appear thicker and bubbly when its ready to flip. They cook in just a couple minutes.

Sourdough Tortillas

Yield: 12

These sourdough tortillas are so soft and chewy, you will want to take tortillas off your grocery list for good! Made with only five ingredients. Let the fermenting to the work!

Ingredients

  • 400 grams all-purpose flour
  • 1/2 cup of butter melted or softened
  • 14 grams salt
  • 200 grams water
  • 200 grams sourdough starter

Instructions

  1. The night before, fee your sourdough starter and leave it out at room temperature.
  2. The next morning, mix all 5 ingredients in a large bowl. Mix just until the dough becomes shaggy.
  3. Let sit for 30 minutes.
  4. Fold the dough over itself several times, until the dough starts to come together. The dough will appear moist, that is good. Let rest for 4 to 12 hours. Or until ready to cook tortillas.
  5. When ready to cook, give the dough several more folds. Put the dough out on a floured surface and divide into 12 pieces. Roll the dough out into a thin circle. As thin as you can make it, without breaking the dough.
  6. Cook the tortillas on a high heat griddle (or pan) with a little oil. Bubbles will appear when the tortilla is ready to flip. Serve and enjoy!

Notes

The dough should be moist and sticky to touch. Sourdough is generally moister than yeasted dough. The longer the dough sits the more of a sour it will taste. Which is actually delicious!
