Chorizo Shepard’s Pie

This Chorizo Shepard’s Pie has a Mexican twist. Having some basic family recipes memorized or on hand can be super handy when throwing together a quick family dinner. My grandma made Shepard’s pie and so did my mom. So naturally its in my list of memorized recipes. I hadn’t gone to the grocery store for a while, so this dinner was inspired by what ever I had in the kitchen. I did throw some sweet potatoes in the oven the day before. I was sure glad I did, because that made this dinner so much easier to pull together.

So I pulled out everything I had left and this is what I came up with! I always keep a bag of frozen veggies for a quick fix, onions are a pantry staple and I make sure I never run out, sweet peppers needed to be used, a little bit of cilantro left and a bit of pepper jack cheese. I never use a full can of tomato paste, so I freeze the extra.

Use what you have. Make dinner work for you and be flexible with your ingredients. Keep it simple!

I also have a freezer full of elk. My secret for adding great flavor to wild game, is mixing it with sausage, beef or pork. Because its so lean, it needs some extra love!

Chorizo Shepard’s Pie

Ingredients

  • 1 onion diced
  • 2 Carrots chopped
  • 2 celery stalks chopped
  • handful of mini sweet peppers or 1 bell pepper
  • 2 tbls olive oil
  • 3 garlic cloves crushed
  • 1/2 lb. beef or wild game
  • 1/2 package of Chorizo or whole (but its spicy!)
  • dash of Worcestershire sauce
  • 4 ounces of tomato paste
  • 1 tsp of chili
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt and dash of pepper
  • 1 bag thawed green beans, or 1 can
  • 3 to 4 small sweet potatoes already baked
  • 2 tbls of butter ( for potatoes)
  • Shredded pepper jack cheese for topping

Directions

  1. Bake sweet potatoes ahead of time. Bake at 400 for about 30 mins. Poke with fork.
  2. Dice onions, Celery, carrots, peppers. Sauté in 2 tbls of olive in Dutch oven. Until slightly tender. Remove veggies and put in a separate dish.
  3. Add crushed garlic and meat. Brown. Add tomato paste, Worcestershire, and spices. Add a little water if its getting dry.
  4. Meanwhile skin sweet potatoes and mash with 2 tbls of butter and some salt.
  5. Add the veggies back and mix with meat.
  6. Top with thawed green beans and a little more salt and pepper.
  7. Spread Sweet potatoes on top. And sprinkle with pepper jack.
  8. Put under broiler on low, for about 10 mins until cheese is golden.
  9. Top with some chopped cilantro. Enjoy!!!
