Here is a recipe for the perfect light and fluffy buttermilk pancakes. I’ve been making these pancakes for years. And want to share all my tips for the best fluffy buttermilk pancakes. These pancakes are nothing short of honey sweetened homemade goodness.

Over the years my husband and I make quite the breakfast team. While I put together the most fluffy, light and moist buttermilk pancakes. My sweetie is making his famous crispy, quick breakfast potatoes. This breakfast duo has become a weekend special in our house.

The smell of sweet buttermilk pancakes cooking on the griddle and country breakfast potatoes sizzling in the skillet. Children waking up with the sun, John Denver playing on the record player, and the sound of mom and dad stirring in the kitchen. These familiar senses tell me its Saturday at in the Hardman’s house, and all is well.

Finding the Perfect Fluffy Buttermilk Pancake Recipe

When we were newlyweds, my grandma gave me a cookbook for newly married couples. All the recipes are basic, easy and perfect for two. I learned so many basic recipes from this cookbook. As most newlyweds, the budget was tight. We also lived miles away from a grocery store. Learning how to make pancakes from scratch was not just a preference it was a necessity!

Having a few, from scratch recipes up your mama sleeve, is wisdom and power. I know you can get cheap pancake mix, but homemade is so much better! And it’s better for you. Especially when you grind your own wheat.

Over the years, I’ve made these pancakes for my little again and again. Tweaking the ingredients along the way. I’ve made some terrible, flat pancakes over the years Eventually the recipe has grown, changed and adapted into my very own perfect fluffy, honey sweetened, buttermilk pancakes. These are the pancakes my kids ask me to make, and our guests enjoy any morning at our house.

How to make a Fluffy Buttermilk Pancake

There are a few tricks you need to know to make light and fluffy pancakes.

  • Fluff the powders

When you combine the dry ingredients make sure to fluff the powders with a whisk. I like to use baking powder. I know some fluffy pancakes use baking soda and baking powder, but I don’t like the flavor of baking soda in my pancakes. I use 2 teaspoons of baking powder per cup of flour.

  • Use room temp ingredients

Have all your wet ingredients at room temperature. Melt the butter and let it cool a bit on the counter, along with the honey. Heat the buttermilk slightly if needed. And set an egg out. I’m using a fresh farm egg straight from the coop.

  • Use Buttermilk

The buttermilk will create a thicker batter. You may be tempted to water the batter down, but a nice thick batter will give the pancakes height. Instead of a flat thin pancake. Now you know where the say “flatter than a pancake came from”. The acidity in the buttermilk also tenderizes the flours for a more tender pancake.

  • Do NOT FLATTEN your pancakes

Don’t flatten the pancake with your spatula! We have all flipped a pancake prematurely, and flattened it with a spatula, hoping it would cook faster. But all you are doing is squishing the fluff right out of your pancakes! Adjusting the heat just right and waiting till the pancake is ready will solve this problem. Let those hot cakes rise, till they’re nice and fluffy.

  • Flip once

You wouldn’t think the way you cook your pancakes makes much of a difference. But it does. Keep the light and airy quality in your pancakes has a lot to do with how you handle it. Flip them once to keep the fluff.

Perfectly Fluffy Buttermilk Pancakes

Yield: 4 to 5
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

The perfect light and fluffy buttermilk pancake.

Ingredients

  • 1 cup All Purpose Flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 egg
  • 2 tablespoons melted butter
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract

Instructions

  1. For best results, make sure all the wet ingredients are at room temp. Put your egg and milk on the counter. Heat your butter for 20 seconds. And your honey for about 30 seconds. And let cool.
  2. Pour all dry ingredients into bowl and whisk vigorously until fully incorporated. I call this fluffing your dry ingredients.
  3. In a separate bowl, mix all your wet ingredients.
  4. Pour the wet ingredients into the dry ingredients, and mix.
  5. Let sit for a few minutes while the griddle or skillet heats.
  6. Heat a skillet to about 350 degrees and spray with nonstick.
  7. Pour pancake batter onto skillet and cook for about 2 minutes per side. Flip when bubbles from and pop. Do not press down on the pancakes with spatula. Flip once.
  8. Butter and serve with hot syrup.

Notes

If you don't have buttermilk, mix together 1 cup of milk with 1 teaspoon of vinegar or lemon juice. Let sit for a few minutes or until thickened.
