These potatoes have been a family tradition for years. This recipe is the quick way to crispy and delicious breakfast potatoes. The potatoes are fried in a skillet with butter and cheese to crispy perfection.

Quick Breakfast Potatoes: A family tradition

While I’m mixing together fluffy buttermilk pancakes, my better half is cooking up his famous potatoes. My husband grew up in Idaho, so naturally he has an amazing breakfast potato recipe. Jared’s mother would whip up these potatoes in a jiffy every weekend. They are buttery, crispy and easy!

When we got married, we both had different ideas of what breakfast potatoes should be. I grew up with hashbrowns. Jared grew up with these country style potatoes. But when we added the crispy cheese, onions and peppers, it was all over. Nothing could beat these super easy and quick potatoes. Even my mother asked for the recipe!

The Secret to Quick Breakfast Potatoes

Everything my mother in-law makes is categorized under fast and easy. Expedite the cooking process by starting these potatoes in the microwave. You will have to eyeball the cooking times. But it’s about 2 minutes per potato.

Just put all the potatoes into the microwave together. In my recipe I used about 6 medium potatoes and cooked them in the microwave for about 12 minutes. And cooking times may vary on the size of potatoes.

Poke the potatoes with a fork to check for tenderness. You should be able to poke the potato with a fork easily. If under cooked, the potatoes will be crunchy and take much longer in the skillet. If the skins are splitting, they have probably been cooked too long. And will be a mashed potato. In the end, we eat them not matter what. So don’t sweat it too much!

We have found that Russet potatoes give the best results. Although we have used red and gold and that’s fine too. Golds seem to get mushy faster.

What makes Crispy Breakfast Potatoes

What makes these potatoes crispy? The BUTTER of course! Butter is the secret to crispy potatoes. Let your potatoes get crispy in a hot skillet with lots of butter. Since they are already cooked, you don’t need to worry about long cooking times. Just let them sizzle.

The cheese also adds to the crispy nature of the potatoes. Slice or shred cheddar cheese on the potatoes while they are cooking in the skillet. Then flip the potatoes over and let the cheese get crispy on the skillet. The result is crispy cheese on crispy buttery potatoes. So good!

Over the years, I’ve started to add onions and peepers when they are on hand. I just love the flavor peppers and onions add to the mix. But you can certainly go without.

Season with salt and pepper. You can also add Cajun, creole, pepper flakes or any seasoning you like. Our family likes to eat these potatoes with ketchup.

Quick and Cheesy Breakfast Potatoes

Yield: 6 cups
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes

Potatoes are cooked up quickly in the microwave and toasted in a skillet. Crispy, melted cheese is sprinkled over sizzling, buttery potatoes.

Ingredients

  • 4 to 6 medium Russet potatoes
  • 4 tablespoons butter
  • Salt
  • Pepper
  • Half on Onion chopped
  • 1 bell pepper
  • 1/2 cup of cheddar cheese

Instructions

  1. Wash and prep potatoes. Dice onion and pepper.
  2. Microwave potatoes for 2 minutes per potato. For 6 medium potatoes microwave for about 12 minutes. Poke with a fork to check for doneness.
  3. When potatoes are done, cute potatoes with fork and knife.
  4. Turn skillet on to medium-high heat. Melt butter.
  5. Sauté onions and pepper for a couple minutes. Then add potatoes. Cook for 5-7 minutes.
  6. Meanwhile, shred or slice cheese. Sprinkle cheese over potatoes. Stir cheese into potatoes. Let cook and get crispy.
  7. Season with salt and pepper. Serve with hot sauce or ketchup.

Notes

The onion and pepper are optional. Spice up with creole or Cajun seasoning. These are amazing with fried eggs!
