Quick Bread: Honey Oat Bread

Homemade fresh baked bread with melted butter and jam. What is better than that? Maybe it reminds you of home or maybe grandmas house. The aroma of fresh baked bread is a comfort and delicious joy I love to provide my family with each week. But some weeks I don’t always have the time to go through the process of letting the dough rise and bake. This is a no yeast recipe. And it still delivers the aroma and comfort of homemade bread. It is a quick bread similar to a banana bread, or corn bread. So keep that in mind. The yogurt and buttermilk make for a moist loaf. I love that this came together in a little over an hour, with baking time. Double the recipe and freeze one loaf for next week.

Ingredients

  • 1 Cup old-fashioned rolled oats (plus more for sprinkling on top)
  • 2 1/3 cups unbleached all-purpose flour ( I used half whole wheat and all-purpose)
  • 2 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1 cup plain yogurt
  • 1 large egg
  • 1/4 cup olive oil
  • 1/4 cup honey
  • 1 cup buttermilk

Directions

  1. Preheat oven to 350.
  2. Grease a 9 by 5 inch loaf pan.
  3. Mix together oats, flour, baking powder, baking soda, and salt.
  4. In a separate bowl mix the yogurt, egg, oil, and honey until combined. Stir in buttermilk.
  5. Stir yogurt mixture and flour mixture until well combined.
  6. Pour batter into pan and smooth top. Sprinkle with oats.
  7. Bake until golden brown and toothpick inserted into center comes out clean. 65 to 70 mins. Cool for 1 hour before slicing.
